Steel Cut Apple Pie Oats

I make these steel cut apple pie oats every Sunday without fail. I usually spend part of my Sunday on meal planning and prep. This is the perfect recipe for prepping for breakfast for the week. Normally, I make 1.5 batches Bruce eats this 5 days a week and usually I have it twice. He is a creature of habit when it comes to breakfast and I like to mix things up! This literally takes 5 minutes to prep and toss in the slow cooker, it doesn’t get any easier then that. I love love love my slow cooker, I have the Hamilton Beach Programmable Slow Cooker  and I use it all the time. It’s a great way to make healthy meals when you have a busy life!

Steel Cut Apple Pie Oats

Makes 5 servings

1 cup steel cut oats

4 cups unsweetened almond milk or milk of your choice

2 gala apples or your favourite apples

1/4 cup chia seeds

2 tbsp organic honey

1 tsp cinnamon

1/4 tsp fresh grated or ground nutmeg

Directions

  1. Place all ingredients in the slow cooker adding the milk last, stirring as you add it in.
  2. Cook on high for 1 hour and then low for 3 hours.
  3. Store in individual portion sized containers for up to 5 days. To reheat microwave for 90 – 120 seconds, stir and top with your favourite nut butter for an extra punch of protein!
